Recipe
1 medium-large sized Zucchini, grated
1 Cup Flour
1 Cup of Sugar
2 large eggs
1/2 Cup vegetable or canola oil
1 teaspoon of baking soda
1/2 teaspoon of each: cinnamon powder, salt, vanilla extract
1/4 teaspoon of ground nutmeg
1/4 cup of walnuts & raisins if desired
Directions
1. Pre-heat the oven to 350 deg F.
2. In a large bowl, combine the sugar, eggs, and oil and beat until smooth and sugar is no longer grainy.
3. Sift in the flour along with the baking soda, cinnamon, nutmeg, and salt and mix until combined (the batter will be thick, but not for long)
4. Add in the grated zucchini and stir with a spatula until incorporated. Add in the walnuts and raisins if you desire at this point. By now, the batter should be more liquid due to the addition of the zucchini.
5. Pour batter in a greased loaf pan and bake it for about 50 minutes to an hour or until center comes out clean when a toothpick is inserted.
6. When it's done baking, let it cool in the loaf pan for 10-15 minutes then remove from the pan and allow to cool completely before slicing.
